Light and incredibly tasty "Napoleon"
Cooking according to this recipe will not take long. This option is ideal for those who do not have an oven, as the cakes are baked in a pan.
Ingredients for the dough:
- wheat flour - 490-500 g;
- granulated sugar - 180 g;
- butter - 50 g;
- chicken egg - 3 pcs.;
- soda - 0.5 tsp;
- fresh lemon juice - 20 ml;
- salt - a pinch;
- vanillin optional.
For the cream:
- milk - 900 ml;
- granulated sugar - 200 g;
- chicken egg - 3 pcs.;
- corn starch - 70 g;
- butter - 100 g.
Preparation:
Combine eggs, sugar, butter, soda slaked with lemon juice in a suitable mixing bowl. Mix until smooth with a mixer
Pour in salt and flour in small portions. We knead the dough. We wrap the workpiece in cling film and leave it to "rest" for half an hour
After the specified time has elapsed, divide the dough into 12 equal parts
- Roll out each in a thin layer and transfer to a dry (oil-free) frying pan.
- Fry on both sides until golden brown.
So that all the cakes are the same size, carefully cut them around the edges using a plate of the desired diameter or a pan lid
- To prepare the cream, beat the eggs with sugar, starch and vanilla until smooth.
- Pour in a little milk, stir to disperse all the lumps, add the remaining milk and mix again.
- We put the container with the components for the cream on a slow heating, while constantly stirring.
- We remove the pan from the stove, add butter to the finished cream, mix. Cover with foil and wait until it cools down a little.
- In a blender or with a rolling pin, turn into crumbs of crumbs for sprinkling.
- We generously coat each cake with cream, sprinkle with crumbs on top and sides.
For impregnation, we send the cake to the refrigerator for several hours
Milk, eggs and butter should be at room temperature.
Pan-baked Napoleon cake is ready to serve.
Classic recipe with condensed milk
This cake can be safely named "Guests on the doorstep", as it is prepared nowhere faster. Not only will we not bake the cakes in the oven, but in a frying pan, so the cream is made from condensed milk.
Ingredients for the dough:
- flour - 500 g;
- milk - 190 ml;
- butter and granulated sugar - 100 g each;
- vegetable oil - 1 tbsp. l.;
- chicken egg - 1 pc.;
- baking soda - 0.5 tsp;
- salt - 1 pinch.
Preparation:
For the cream:
- butter - 350 g;
- milk - 250 ml;
- granulated sugar - 75 g;
- chicken eggs - 2 pcs.;
- condensed milk - 1 can;
- vanillin and vanilla sugar - 1 tbsp l.
Preparation:
- Grind eggs and sugar with a whisk or fork.
- Add sunflower and softened (previously removed from the refrigerator) butter there. We mix everything.
- Pour milk in a thin stream, mix again and add flour in portions, mix at the same time so that no lumps remain.
- We spread the dough on a work surface and knead with your hands until it keeps its shape well.
- We divide it into 18-22 parts, depending on what size we want to make the cakes.
- Roll out thin layers with a rolling pin so that they are even, cut them out on a plate that matches the size of the bottom of the pan.
- Fry the blanks one at a time in a dry frying pan until cooked. It does not take much time, but so that the cake does not burn, we slightly pry the edge with a knife and evaluate how much it is baked.
- The cakes are ready, we proceed to the cream: grind the eggs with sugar in a bowl.
- Bring the required amount of milk to a boil, pour in the egg-sugar mixture, mix, boil over the fire, stirring constantly until bubbles form on the surface and the mass is compacted.
- Turning off the heating of the stove, add butter to the cream, mix, beat with a mixer at medium speed.
- Introduce condensed milk and vanillin into the increased mass, then mix again until smooth.
We spread the cakes on a wide dish, coat each with cream, lay the next cake on top. We continue in the same sequence
- Sprinkle the cake on all sides with crumbs made from scraps of cakes.

The incredibly delicate taste of a dessert made from cakes soaked in cream has been familiar to many since childhood. You can cook a cake in different ways, without even turning on the oven.
Ingredients for the dough:
- butter - 180 g;
- flour of the highest or first grade - 350 g;
- salt - a pinch;
- water - 80 ml.
For the cream:
- milk - 700 ml;
- butter - 100 g;
- sugar - 120 g;
- corn starch - 60 g;
- yolks from 3 eggs;
- vanillin or vanilla sugar - 1 tsp
Preparation:
- Let's start with the cream. Boil some of the milk, mix sugar and vanillin in a separate bowl, drive in 3 yolks. Pour in the remaining cold milk in a small stream, mix.
- Constantly stirring the sugar and egg mass, pour in hot milk.
- Pour the resulting mixture into a saucepan, stirring continuously so that it does not burn, heat it. It should thicken.
- We remove from the stove, put butter, cut into pieces, mix.
Leave the cream to cool, then cover and put in the refrigerator
- With the custard finished, it's time to start with the cakes. The butter must be hard, so cut it into cubes and freeze it in the chamber (15-20 minutes is enough).
- Combine butter, salt and flour in a bowl, where we will knead the dough. As soon as possible, without letting the butter melt, grind it with flour until you get crumbs.
- Gradually pour in water and knead the dough. The consistency turns out to be moderately dense, slightly heterogeneous - it should be so. Then you do not need to knead it, cover the lump with a film and put it in the cold for 20 minutes.
- Roll the cooled dough into a sausage, cut into 10-12 parts, roll out a cake 1 mm thick from each.
We cut out a circle on the plate, do not throw out the trimmings, they will be needed for sprinkling. We prick the cakes with a fork, fry one by one on both sides in a frying pan without oil until browning
We collect the cake, coat each cake with plenty of cold cream. At the final stage, sprinkle with the crumbs left over from the scraps and fried in a pan
To make the dessert a perfectly even shape, use a special culinary ring for assembly. Then carefully remove it.
Napoleon cake with walnuts
The recipe for such a dessert is passed down from generation to generation in many families, and each housewife has her own secrets. Ideally, the cooking process is quite long and laborious, but it turns out that everything can be simplified.
Ingredients:
- margarine - 200 g;
- water - 1/3 cup;
- salt - a pinch;
- flour - 480 g;
- granulated sugar - 6 tbsp. l.;
- milk - 500 ml;
- chicken egg - 1 pc.;
- butter - 150 g;
- vanilla sugar - 1 tsp;
- walnuts - 30 g.
Preparation:
- Melt, then slightly cool the margarine. We pour in water (always cold). Add salt, flour, but not all, leave a couple of spoons.
- Knead the dough with a spatula, then with your hands. As soon as it stops sticking to the sides of the bowl, cover with plastic and put it in the refrigerator for half an hour.
- To prepare the cream, bring half of the milk specified in the recipe to a boil. Pour the rest into another bowl, drive in an egg, add sugar and 30 g of flour. Mix everything until smooth.
- Pour the cold egg-milk mixture into the hot milk in a thin stream. Stirring continuously, cook the cream until it becomes jelly.
- Remove from the stove, add butter and vanilla sugar, mix until the bulk components and oil are completely dissolved. Leave the cream to cool at room temperature.
- Divide the chilled dough into 10 parts, roll it into balls, roll it into thin cakes so that the cakes do not swell during baking, prick with a fork. Shape and bake in a preheated pan on each side.
- Dry the remaining scraps from the cakes in a pan until crisp, let cool, knead into small crumbs.
- Put the cakes one by one on a large dish. We coat each with cold cream, decorate with sprinkles and walnuts on top and around the edges, as shown in the photo for the step-by-step recipe.
- We put the Napoleon in the refrigerator for about 5 hours, then serve.
As a decoration, you can use any nuts, fruits and berries at your discretion.
