Ingredients:

  • 350 g flour;
  • 150 g sugar;
  • 5 g ground cinnamon;
  • 5 g ginger;
  • a pinch of nutmeg;
  • a pinch of cloves;
  • ¼ h. L. soda;
  • a pinch of salt;
  • 100 g butter;
  • 50 ml of honey;
  • 1 chicken egg.

Preparation:

  1. Cut the cold butter into cubes and send it to the blender bowl along with flour, soda, cinnamon, nutmeg, ginger, soda, cloves and honey.
  2. Mix all the ingredients until you get flour crumbs and put them on the table.
  3. In the center we make a small depression, drive in an egg, knead the dough, which we collect in a ball, wrap it in plastic and send it to the refrigerator for half an hour. If the dough crumbles, then add 1 teaspoon of cold water until the flour mass is collected in a ball.
  4. Then we take out the chilled dough, roll it out into a layer at least 1 cm thick and use molds to cut out any New Year's figures. If the gingerbread will be used as a decoration for the Christmas tree, then in each product we immediately make small holes.
  5. We transfer the figures to a baking sheet with parchment and send them to the oven for 15 minutes, temperature 170 ° C.
  6. Cool the finished gingerbread for 5 minutes, and then transfer to the wire rack.

For decoration, you can make a glaze from egg white, which we grind with 150 g of powdered sugar and 3 drops of lemon juice. We put the icing in a pastry bag and, until it has frozen, decorate the gingerbread pastry.

In Russia, honey cakes have always been considered a symbol of fun and celebration.   4. After that we put the dough in a bag and leave it in the refrigerator for several hours, or better for the whole night.
  5. Then we take out the base for the gingerbread, bring it to room temperature and roll it into a layer at least 1 cm thick.
  6. Now we cut out the figures from the dough, put them on a baking sheet with parchment and in the oven for 12-15 minutes, temperature 175 ° C.
  7. If desired, decorate the finished gingerbread with chocolate icing, for this we just take dark chocolate, break it into pieces and melt it on the stove or in the microwave.
