Shawarma is a delicious dish for which it is very important to prepare the right sauce. At home, it is quite possible to make the same dressing as in fast food outlets, using a step-by-step recipe. The sauce comes out really tasty and spicy.
Ingredients:
- sour cream - 3 tbsp. l.;
- mayonnaise - 3 tbsp. l.;
- kefir or fermented baked milk, ayran, low-fat sour yogurt - 3 tbsp. l.;
- garlic - 2 cloves;
- sour cucumber - 1 pc.;
- dill - a few branches;
- curry - ½ tsp;
- ground coriander - ½ tsp;
- cumin - ½ tsp;
- salt and black pepper.
Preparation:
The thickness of the sauce can be controlled according to your taste. Before cooking, you need to get all the products indicated in the recipe
Pour the spices into one bowl. It is not necessary to mix them with each other. Grind the cucumber with a grater. If necessary, squeeze out excess moisture. Do the same with garlic cloves
Stir grated vegetables with spices. Try to make the mass more or less homogeneous
Introduce mayonnaise and sour cream into the preparation. Pour kefir or any other drink indicated in the list of ingredients. At this stage, you can decide on the thickness of the sauce

Ingredients:
- sour cream 15% - 100 ml;
- mayonnaise - 80 ml;
- garlic stalks - 3 pcs.;
- dill - 0.5 bunch;
- salt and pepper to taste.
Preparation:
Place the sour cream and mayonnaise in a deep tumbler for a hand blender or in a container with high sides. Add fine salt and ground black pepper. If desired, you can add other spices: white ground pepper, a little ground coriander
Rinse the green garlic stalks, removing the top layer, and the dill branches. Pat dry with paper towels to remove excess moisture. Chop and add both slices to a container
Purée everything with a hand blender for 2-3 minutes until the mixture turns greenish. Sour cream, in contact with chopped herbs, will become more liquid, so the consistency of the sauce will not be thick, but more fluid
If you don't have a blender, mix all the ingredients with a mixer, using pressed fresh garlic instead of green
Pour the finished sauce into a container / jar with a lid and refrigerate in the refrigerator for at least 2 hours. After that, pour it into a gravy boat and serve with hot shawarma. You can season its layers with sauce, twisting them for frying
The shelf life of such a product is 1 day if stored in a cold place.
Real kefir shawarma sauce
Sauce is an integral part of shawarma. The recipe for cooking it at home is elementary, but not everyone is familiar with it. All it takes to make a classic shawarma dressing is dairy, a couple of cloves of garlic, and the seasoning.
Ingredients:
- mayonnaise - 250 g;
- kefir - 200 g;
- sour cream - 3 tbsp. l.;
- garlic - 3-4 cloves;
- curry - 1 tsp;
- hops-suneli - 1/2 tsp;
- dried paprika - 1/2 tsp
Preparation:
So, we start preparing our shawarma sauce by preparing all the necessary ingredients. We take out dairy products (kefir, sour cream, mayonnaise) from the refrigerator, lay out the cloves of garlic, and also arm ourselves with the necessary spices - paprika, curry and hops-suneli
We take a vessel of a suitable volume, add sour cream, kefir and mayonnaise to the container, which is indispensable. Remember that it is better to use fatty dairy products or with an average percentage, since low-fat ones are liquid, and we need a thick shawarma sauce
We peel the garlic, rinse it under running water and pass it through a press. Add the chopped vegetable to the mass to the dairy products. We supplement the entire resulting composition with spices and mix thoroughly
After these manipulations, we send the sauce to the refrigerator for a while, so that all the ingredients are thoroughly saturated with spices. 2-3 hours will be enough. After the specified period of time has elapsed, take out the prepared shawarma sauce from the refrigerator
Shawarma sauce without mayonnaise
Shawarma sauce can be made without mayonnaise. The taste will be soft, milky, with a pleasant aroma of herbs.
Ingredients:
- sour cream - 100 g
- kefir - 3-4 tablespoons
- garlic - 1 clove
- parmesan - 30 g
- fresh parsley - 2 sprigs
- fresh dill - 2 branches
- black pepper - 1 pinch
- salt to taste.
Preparation:
Wash the parsley and dill, pat dry with a paper towel and chop finely. Grate the cheese on a fine grater. Squeeze the garlic through a press

If the sour cream is fat and thick, then you will need more kefir. In principle, kefir can be replaced with yogurt, but I'm not a particular fan of this product, I like kefir more
Connect all components. Mix thoroughly. Shawarma sauce without mayonnaise is ready! We add it when baking shawarma on the grill or in the oven, the cheese will melt and it will be very tasty
This sauce is also good for fish or poultry.
Shawarma tomato sauce
Tomato paste ketchup is a delicious sauce that can be easily made at home.
Ingredients:
- tomato paste - 360 g;
- greens (parsley, dill) - 30 g;
- garlic - 2 cloves;
- onion - 1 pc.;
- vinegar 6% - 1 tablespoon;
- vegetable oil - 1 tsp;
- chili pepper - 1 pc.;
- water (boiled, chilled) - 100-150 ml;
- black pepper - to taste;
- salt to taste.
Preparation:
Put the peeled garlic and onion, chili and herbs (without sticks) in a blender bowl

Stir quickly
