  • a goose weighing 4.5 kg;
  • for brine for 1 liter of water 25 g of salt.

For marinade for 1 kg of bird weight:

  • 1 tsp mustard;
  • 1 tbsp. l. honey;
  • ½ tsp each. salt and pepper;
  • ½ tsp dry garlic;
  • ¼ h. L. seasonings for chicken;
  • zest of ½ orange.

For filling:

  • 4-5 sour apples;
  • 1-2 oranges;
  • 100 g of prunes;
  • 100 g of dried apricots.

Preparation:

  1. We prepare the goose carcass: we cut off the internal fat, cut off the extreme phalanges of the wings, be sure to remove the glands on the tail. Soak the bird in salted brine for two days.
  2. For the marinade, add all the spices, spices, mustard and zest of half an orange to the honey. Stir thoroughly.
  3. For the filling, we take oranges, peel off the peel from them and cut each into four parts. We also divide the apples into four parts and cut out the seeds.
  4. We send apples, oranges, dried apricots and prunes to the total container, mix.
  5. We rub the goose inside with half of the entire portion of the marinade, stuff it with fruit, chop off the abdomen with toothpicks or sew it up with threads.
  6. We also lightly coat the incision on the neck with marinade. If there is room, lay the fruit, peel off the skin or sew it up.
  7. Cover a deep baking sheet with foil, put the goose, carefully coat with the remaining marinade on all sides.
  8. We seal the bird in foil and leave it for several hours, or better overnight. Then we send it to the oven preheated to 140 ° C, bake at the rate of 1 hour per 1 kg of poultry.
  9. After half the required time, unfold the goose and pour it with melted fat and juice. We repeat the procedure every 20-30 minutes.
  10. As soon as the goose is ready, unfold the foil and cook it for another 20-30 minutes.

Not a single festive table is complete without desserts. For Christmas 2021, you can bake goats - a quick and tasty dish of Russian cuisine in the form of different animals.
