It is not difficult to make wine from cherries with seeds at home. If you follow the rules of winemaking, the result will be an exquisite drink with a strength of 11-13%. Here are some simple recipes.
Cherry pitted wine - a simple recipe
We offer the simplest recipe for homemade cherry pitted wine. The process consists of several stages, it is not fast, but the result is worth it.
The berries are harvested in sunny weather, in no case are they washed, otherwise you can wash off the natural yeast. Sweet and sour varieties are ideal for fine wine.
Cherries must be ripe, unripe berries will not ripen the wine. Be sure to sort out the berries, putting rotten fruits in the wort is unacceptable.
Ingredients:
- 10 liter bucket of cherries;
- 1.5 liters of clean water;
- 6-7 kg of sugar.
Preparation:
Pour cherries into a container for food products with a volume of 60 to 70 liters
- The fruit must be crushed. This can be done with your hands, a wooden stick, or any other convenient tool.
- The result is a pulp, into which we pour clean warm water, and then add sugar. Stir until it is completely dissolved.
- We close the container with a lid, but not too tightly. We transfer to a room where the temperature will not be lower than 20 ° С, but also not higher than 22 ° С.
- Every day, mix the pulp 2-3 times (not more often).
- A week later, vigorous fermentation should end, which means we mix the wort and leave it under the lid for 5 days.
- Remove the pulp after 5 days. We get young wine, which we leave alone for at least a week, maybe for 10 days. We also close the container with a lid.
- Then we remove the pulp again, and pour the young drink with the help of a tube into a smaller container. In the process of pouring, we try not to touch the sediment at the bottom of the container.
- We put a regular medical glove on the neck of the jar, pierce one finger and transfer the wine to a room with a temperature not lower than 10 ° С and not higher than 15 ° С. This is a quiet fermentation stage that lasts 10 to 12 days.
- After the drink needs to be cleaned of sediment, so again, using a thin tube, pour it into a storage container.
- We take the wine to the cellar or cellar, wait a month, but ideally 3 months, because the longer the wine is kept, the tastier it will be.
Transfusion can be done 2 more times with an interval of 1 month, then the wine will be perfectly clean.
Cherry wine with lemon
We suggest trying another recipe for making wine from cherries with seeds. A simple process will allow you to get a delicious and aromatic drink at home that can surprise guests.
Ingredients:
- 3 kg cherries;
- 4 liters of water;
- 2 lemons;
- 1.5 kg of sugar.
Preparation:
We sort out the berries, but do not rinse them, remove the rotten fruits and pour them into a large container. In any convenient way, crush the cherries so that the fruits give as much juice as possible
- After that, the pulp together with the released juice and bones are transferred to another container, it is better if it is a glass bottle.
- We boil water, put the cherries, cover the container with gauze, bandage and leave in a warm dark place for 4-5 days.
- As soon as the wort begins to ferment, that is, there is a hiss, foam and a characteristic smell, we filter the wine blank through cheesecloth folded in two layers. Wort is the juice that is released during fermentation.
- Squeeze the juice from two lemons into the wort, add granulated sugar, stir thoroughly and pour into a bottle.
- We put a water seal on the glass container, or you can simply pull on a medical glove, piercing one finger.
We transfer the future wine to a dark place with a temperature not higher than 18 ° С and not lower than 15 ° С. And in order to prevent the appearance of vinegar zones and get a tasty wine, if possible, we mix the wort every day
- As soon as a sediment appears at the bottom of the vessel and the wine becomes light, the fermentation stage is complete.
- We filter the drink, bottle it for storage, seal it tightly with corks and take it to a dark, cool place. It is advisable to taste the wine in six months.
Do not use aluminum or metal utensils to prepare wine.
Cherry wine with wine yeast
Experienced winemakers know that the most important thing in wine making is fermentation. If the cherry is grown in its own garden, then there is already wild yeast on its surface, and they are able to help the raw material to ferment, the main thing is not to wash the fruits. But if you bought a cherry, then you won't be able to make wine without adding special yeast.
It is better to buy cultured yeast specifically for the raw materials used, that is, for berries. There are also universal yeasts, they ferment all raw materials, but unlike special ones, they do not fully reveal the shades of the drink's taste.
Ingredients:
- 1.5 kg cherries;
- 1.5 liters of water;
- 100 g fresh yeast;
- 700 g sugar.
Preparation:
Since the recipe uses yeast, the cherries can be washed and even soaked in cold water for 15 minutes
- We pour the berries into any suitable container, for example, into a plastic bucket, and knead the berries with our hands as if we are trying to squeeze seeds out of the fruits.
- If you do not want to carry out such manipulations with your hands, you can use a regular mashed potatoes.
- Pour in granulated sugar and mix everything well.
- Crumble the yeast and add to the cherries with sugar.
- Next, pour in water, it should not be cold, otherwise the yeast will not activate (room temperature or slightly warmed up).
- Stir everything again, cover with foil and leave it anywhere, but most importantly, not in the sun.
- The contents of the bucket will ferment for three days. Mix the mass every day. By the end of the third day, we do not interfere with anything, and through a sieve or cheesecloth we filter the young wine into another container.
- We leave all the pulp and what has settled to the bottom in a bucket. For more confidence, you can filter again.
- We pour the wine into bottles and transfer to a cool place. After 2 months, the drink will be ready to drink.
Interesting! Homemade black currant wine
If the wine is prepared without yeast, then remember that wild yeast is very capricious and can stop working at any time. Therefore, it is still better to keep wine yeast on hand or, in extreme cases, add a handful of raisins.
Wine "Drunken cherry"
Such a simple recipe will allow you to make at home not only wine from cherries with seeds, but a tincture, because vodka is used here. But this method can also be considered, because many home winemakers claim that such a drink is quite tasty.
Ingredients:
- 2 kg cherries;
- 250-300 g sugar;
- 800 ml of vodka.
Preparation:
- We sort out the cherries, rinse well and let the liquid drain completely.
- We transfer the berries to a clean glass container, fill to the very top.
- Pour granulated sugar to the cherry.
- Next, pour in vodka or moonshine right up to the neck.
- Close the container with the contents tightly with a nylon lid and turn the jar over several times so that the sugar is dispersed as best as possible. It is advisable to repeat this procedure for the first 2-3 days. During this time, the berries will give a lot of juice, and the granulated sugar will dissolve.
- We transfer the jar with the future liqueur to a dark place and keep it at room temperature for 2 months.
- After 2 months, you will get a liqueur of a beautiful rich color with an extraordinary taste and aroma.
After aging, alcoholized cherries can be used to make cakes, desserts and homemade sweets.
Homemade wine made from old cherry jam
If you have prepared too much cherry jam for the winter, then you should not throw it away, because this is an excellent raw material for wine. The recipe is very simple and practically does not differ from making a drink at home from fresh cherries with seeds.
Ingredients:
- 2, 5 liters of cherry jam;
- 2.5 liters of water;
- 1 tspSahara;
- 1 tbsp. l. dry wine yeast.
Preparation:
Take a large saucepan and pour the jam into it. If the product is sugared or fermented, it's okay. By the way, you can use not only cherry jam. For example, cherry goes well with pear or apple. You can prepare wine with different flavors
- The jam needs to be boiled. Some people think that this is not necessary, but experienced winemakers still insist, otherwise there is a risk that the mixture may ferment into vinegar.
- Instead of yeast, you can use raisins, about 250 g. Then we immediately send the dried fruits to the fire along with the jam.
- You do not need to boil the jam for a long time, after boiling, wait 5 minutes and turn off the heat. Then we give the raw material time to cool down to about 25 ° C.
- If you still use dry yeast, then pour it together with sugar into a separate bowl, pour in half a glass of warm water and stir.
- Pour the jam with the remaining warm water, pour in the yeast diluted in water with sugar. Stir everything well, cover the container and leave for 5 days for fermentation.
After the active fermentation process is completed, filter the wort through cheesecloth, discard the cake
- Pour the wort into clean jars, or into a large bottle. Remember that the wine will still ferment, so we fill the container 2/3 of the total volume.
- We install a water seal or use a rubber glove, remembering to pierce one finger.
- We transfer the wort to a dark place and leave it for 30-40 days (the exact time depends on the temperature in the room). As soon as the glove is lowered, the fermentation process is complete. In this case, the drink should become translucent, and all the sediment should be at the bottom.
- We drain the light liquid (it is better to use a thin silicone tube for this). We put one end in a clean bottle, and the other in the fermented wort, just don't touch the sediment.
- We pour young wine into bottles, cork and transfer to a cool place. To taste a delicious drink, you will have to wait 2-3 months.
To prepare wine, use a clean container scalded with boiling water, this will prevent the appearance of mold on the surface of the drink.
