  • 2/3 st. wine yeast.

The main stages of preparation:

  1. We take out the seeds with the cherries, remove the stalks and discard the rotten fruits. At the same time, it is not recommended to rinse them under running water.
  2. Pour the berries into a deep saucepan and fill them with filtered water for 2-3 hours. If this is not done, it will be much more difficult to separate the wort in the future.
  3. Lining the bottom of the fermentation tank with a piece of natural fabric. Pour the prepared berry mass there. We fill everything with 2 liters of filtered water.
  4. Using a mashed potato crush, "grind" the fruits to form a gruel. It should be as homogeneous as possible.
  5. We tie the edges of the fabric into a knot, twist it and squeeze it well. If done correctly, thick cherry juice will remain at the bottom of the container.
  6. We add wine yeast and half granulated sugar to it. Gently mix everything with a wooden spatula and pour the future wine into a large bottle. It should be infused in a dark and calm place for at least 12 days.
  7. After the specified time, add the remaining sugar to the drink and fill everything with alcohol. And again we put the bottle in a dark place for 10 days.
  8. After that, we carefully filter the homemade cherry wine, pour it into glass bottles and hide it in the cellar until requested.

The classic cherry wine recipe

From ripe fruits, you can make a wonderful drink with a pleasant aroma and bright taste. Due to the increased acidity and the presence of tannins, cherry wine will become tart and resistant to souring.

Ingredients:

  • 10 liters of filtered water;
  • 6-7 kg of ripe cherries;
  • 3 kg of granulated sugar.

  1. We sort out the berries and leave only ripe and undamaged fruits.
  2. Cover a deep bowl (pan) with a clean cloth made of natural materials. Knead the cherries in it with your hands or a mortar (you can leave the bones if you wish).
  3. Pour the resulting gruel with purified water and squeeze well.
  4. Pour the remaining liquid into a prepared glass container for fermentation. On its neck we put on a rubber glove purchased in advance at the pharmacy.
  5. We put the jar in a dark, warm place. Fermentation will begin in a few days and will last for about a month. During this period, stirring homemade cherry wine or opening the container is not recommended.
  6. You can try alcohol at home according to this recipe after all the air has gone out of the glove, and light foam stops appearing on the surface of the drink.

  8. Another important point is that in order to protect the drink intended for long-term storage from souring, it is recommended to add 0.5 liters of vodka to it. But in this case, the strength of the wine will increase significantly.
