Black currant is a special berry, delicious and very healthy. At home, you can make jam, preserves, and also wine from it. A simple step-by-step recipe will allow you to get a delicious drink, however, without a rich aroma. This is the only drawback of blackcurrant wines.

Blackcurrant wine - a simple recipe

As a rule, compotes, jam, berries are dried or frozen from black currant at home, but wine is rarely made. And it is completely in vain, because even the simplest step-by-step recipe will allow you to get a delicious drink that cannot be compared with the wine that is now sold in stores.

Ingredients:

  • 10 kg of black currant;
  • 15 liters of clean water;
  • 5 kg of sugar.

Preparation:

First of all, we sort out the berries themselves, remove all the leaves, twigs, stalks and spoiled fruits. For wine, we use only fully ripe berries, but do not use spoiled and already rotten ones

Image
Image

In no case do I not wash the currants, because on its surface there is wild yeast that promotes fermentation. We just pour the fruits into any container, the main thing is that it is not made of metal, which oxidizes the berries and spoils their taste. And we crush them with a pestle so that not a single whole berry remains

Image
Image

We warm the water, but do not boil it, stir half of the granulated sugar in it until it is completely dissolved and mix the resulting syrup with the crushed berries, that is, with the pulp

Image
Image
  • Cover with gauze and leave warm for 2-4 days. Every day, preferably in the morning and in the evening, stir the mixture, otherwise it will simply turn sour.
  • As soon as white bubbles appear in the pulp that has floated to the surface, and the smell from it becomes sour, using a hose we drain the liquid into a glass jar, you can take a plastic tank.
Image
Image
  • Stir 500 g of sugar in the drained juice and put a water seal on top of the container, you can take an ordinary medical glove, only in one finger we make a puncture with a needle. We also leave the wine to ferment in a warm and dark place for a month. But we do not completely forget about it, and every 4 days we taste it and gradually add the remaining sugar.
  • A month later, in a container with wine, you can see a sediment that is formed from already dead yeast fungi, which must be removed so that the taste of the wine does not deteriorate. To do this, we also pour the wine into a clean jar using a tube, put a water seal, that is, a glove, and let the wine ferment for 10-12 weeks, but only in a cooler place, with a maximum temperature of + 12 ° C.

Image

As soon as the glove comes down, it means that the wine has won back. We bottle it, be sure to taste it, add sugar if necessary, cork it and store it in a cool place, for example, in a cellar

Homemade blackcurrant wine can be stored for up to a year. With long-term storage, the drink loses its taste.

Blackcurrant wine with raisins

At home, you can get black currant wine with raisins. The recipe is simple, the main thing is to follow the instructions step by step, and then the drink will turn out with an exquisite taste and sophisticated aroma.

Ingredients:

  • 5 kg of black currant;
  • 10 glasses of sugar;
  • 50 g raisins;
  • 10 glasses of water.

Preparation:

We sort out the berries, pour them into a bowl and crush. Experienced winemakers advise doing this directly with your hands, because this way you can feel which berries have been crushed and which have not. Now pour cold water into the berry mass, which will reduce the acidity of the finished wine and determine its strength, that is, the more water, the lighter the drink

Image
Image

We add sugar, the exact amount will depend on how strong you want to make the wine. Next, we send raisins, which will speed up the fermentation process and give the drink a special taste

Image
Image

So, stir everything, cover it with a cloth and leave it in a cool place for 5-7 days. Every day we mix the mass, that is, the pulp, so that it does not sour and does not become moldy

Image
Image

After 5-7 days, we squeeze the pulp manually or using a press, pass the released juice through cheesecloth or a sieve, pour it into a glass bottle, pull a glove with a pierced finger over the neck and leave it for a week. It is important to take into account that the bottle cannot be completely filled with juice, only ¼ of the container, otherwise the wine will simply run away during the fermentation process

Image
Image

We don't throw away the pulp, but add water to it, sugar to taste, leave it in a cool place, and after a week we repeat the process with squeezing and filtering the juice

Image
Image

By this time, the first batch of juice also needs to be passed through cheesecloth, and now we combine both batches, leave it under the water seal for another week

Image
Image

After 7 days we filter the drink, and bottle the pure wine of our own making and store it in a cool place.

Homemade blackcurrant jam wine

If the blackcurrant jam is fermented, candied, or there are simply blanks from last year, and a new batch is on the way, then you should not worry. After all, there is a simple step-by-step recipe that at home will allow you to get delicious wine not from fresh berries, but from jam.

Image
Image

Ingredients:

  • 1.5 liters of blackcurrant jam;
  • 1.5 liters of water;
  • 100 g of sugar.

Preparation:

If the jam is sour, then remove the mold from above and put the sweet mass in a saucepan, pour in warm water and add half of the granulated sugar. Despite the fact that the jam is already sweet, sugar must be added without fail, otherwise the fermentation process will not start

Image
Image

We leave the pot with the contents warm, and as soon as the pulp, that is, the pulp, rises to the surface, it means that the mash for wine is ready

Image
Image

We filter it through a sieve or cheesecloth into a clean bottle, add the remaining sugar and transfer it to heat for 3 months

As soon as the wine plays out, we drain the drink through the tube, fill the bottles, cork and keep in a cool place for 24 hours. After the drink, you can already try.

Homemade champagne made from black currant leaves

Many do not even realize that at home you can get real champagne, but not from fresh black currant berries, but from its leaves. In appearance, you can't even tell that this is a homemade wine, and not a store-bought drink. At the same time, the recipe for sparkling wine is very simple, the main thing is to follow all the points of the proposed instructions step by step.

Ingredients:

  • 20 g of black currant leaves;
  • 3 liters of water;
  • 200 g sugar (+ 4 tablespoons);
  • 1 lemon;
  • 0.5 tsp wine yeast.

Put young black currant leaves in a clean jar, add sugar and pour in water

Image

Peel the zest off the lemon in a thin layer without white peel, then completely peel the citrus, cut into pieces and send everything to the jar with the rest of the ingredients

Image
Image

We choose a sunny place, put the jar and leave it for 2-3 days, during which time the sugar will completely dissolve

Image
Image

Now we activate the wine yeast, for this we simply pour it into a bowl with a small amount of warm water, stir it and after 15 minutes pour it into a jar with a drink

Image
Image

We put a water seal and transfer it to a cool place for 7-10 days

Image
Image

As soon as fermentation is over, we pass the drink through any filter, you can take a thick cloth

Image
Image

From a small amount of water and 4 tbsp. spoons of sugar, cook the syrup, mix with wine and bottle the drink

We take the bottles to the cellar, leave them for aging in an inclined position. In a month we get champagne with wine and bright lemon-currant taste.

Blackcurrant pouring - vodka recipe

At home, black currant can be used to make a liqueur, which is often confused with wine. But these are two different drinks that differ in strength and taste. The taste of the liqueur depends on the quality of the raw materials and the alcohol base, the taste of the wine depends on the quality of the juice.

You can also make a berry liqueur, which takes its strength, and the liqueur - sweetness. Therefore, we will consider a simple step-by-step recipe for making exactly the liqueur.

Ingredients:

  • 500 g black currant;
  • 2 tbsp. l. Sahara;
  • 1 liter of vodka.

Preparation:

It is much easier to obtain liqueur than wine. To do this, we sort out the berries, rinse them, pour them into a clean jar along with sugar, pour in vodka

Image
Image

We close it with a lid on which we write the date of preparation of the drink

Image
Image
Image
Image

Gently shake the jar with the contents: the sugar should completely dissolve, and send it for storage. Stir the berries for the first three days

Image
Image
Image
Image

You can try the filling after a week, but it is better to withstand it for a month, so the drink will be better enriched both in taste and color. If there is no vodka, you can take alcohol and dilute it with water in a 1: 3 ratio.

Some prepare liqueur on moonshine, others argue that there is no better cognac as an alcoholic base. You can also diversify the taste of the drink by adding some spices, such as cinnamon, cloves, nutmeg or coriander.
