You will need:

  • cottage cheese (preferably homogeneous) - 350 grams;
  • butter - 250 grams (it will need to be softened);
  • flour - 400-450 grams;
  • a teaspoon of baking powder;
  • gram of vanillin;
  • cinnamon optional;
  • sugar for sprinkling.

First, mash the cottage cheese, add butter to it and stir. Next, prepare the required amount of flour, add baking powder and vanillin to it. Sift the flour into the curd mixture and knead the dough. You will need to make a ball out of it, wrap it in foil and put it in the refrigerator for 40 minutes.

After a lapse of time, the dough must be taken out and allowed to lie down for a while at room temperature. Then roll out the dough with a rolling pin on a floured surface. The thickness of the layer depends on how you want to shape your liver.

If you want to make it into circles, cut out with a special shape or with an ordinary glass, then the layer needs to be made thicker.

If you fold the circle in half, make the layer a little thinner. And if you want to roll the circles 3 times to get triangles, then roll out the dough very thinly.

Roll out the dough, cut out the circles, give the shape you want, and then dip the resulting products in sugar on one side and place on a baking sheet covered with a baking mat.

Preparation:

1. Put the curd in a deep bowl. Add egg, vanilla sugar, cinnamon, salt and finely grated zest. Kill everything with a blender into a homogeneous mass. If there is no blender, then the first step is to grind the cottage cheese through a sieve and then mix with the rest of the ingredients.

2. Combine flour and baking powder and sieve through a sieve. Next, in a bowl of flour on a coarse grater, grate the chilled butter and mix well to make a crumb.

3. Add the butter and flour crumb to the curd mass and knead the dough. You need to work quickly so that the oil does not melt too much. Wrap the finished dough in plastic wrap or a bag and refrigerate for 20-30 minutes.

4. Remove the dough from the refrigerator and separate about 1/3 of the part, put the rest back in the refrigerator.

5. Sprinkle a little flour on the table and roll out the dough into a layer about 3 mm thick and cut out circles in a round shape or glass.

6. Pour sugar into a shallow wide plate. Dip the dough roll well in sugar on one side and fold in half with sugar inside.

7. Dip the half-folded circle of dough again in sugar on one side and again fold in half to form a triangle.
