It was believed that the richer it is, the more fruitful the coming year will be. Today, not only wheat is used for kutya, but also other cereals. For example, for the holiday of 2020, you can simply and deliciously cook ovy from pearl barley. Ingredients:
- 200 g of pearl barley;
- 600 ml of water;
- 1 tsp salt;
- 50 g of walnuts;
- 50 g dried cranberries;
- 50 g raisins;
- 4 tbsp. l. poppy;
- honey to taste.
Preparation:
We wash the barley well, fill it with two glasses of cold water and leave it for 1 hour
After that we drain the water, pour the cereals into the pan, pour in 3 glasses of water and put on the fire
At this time, fill the poppy with a glass of boiling water, wrap it up and steam for 30 minutes
Also, for steaming, pour boiling water over dried cranberries and raisins, leave for 20 minutes
As soon as the cereal boils, add salt to it and cook until fully cooked, about 25-30 minutes. Dry the walnuts in a dry frying pan, peel and cut into small pieces
We strain the liquid from the raisins and cranberries, also drain the water from the poppy and grind it in a mortar
Drain the water from the finished barley, add honey and poppy seeds to it, mix well
Now pour in the cranberries with raisins and nuts, leave a little for decoration, and mix everything again
Other dried fruits can also be added to the sochivo, but poppy seeds and honey must be present. After all, poppy symbolizes wealth in the house, and honey is considered a symbol of health and well-being.
Christmas bags with herring

Ingredients:
- 200 g spinach;
- 100 ml of water;
- 3 eggs;

For filling:
- 1 herring fillet;
- 100 g cream cheese;
- 1 tbsp. l. mayonnaise;
- greens to taste;

Preparation:
Pour fresh spinach leaves with boiling water and after half a minute drain the water, and rinse the greens under running water
We transfer the spinach into a bowl, pour in 100 ml of water to it and interrupt with a blender until smooth
In a separate container, beat the eggs with an ordinary whisk with the addition of salt and sugar
Pour some of the milk into the egg mass, stir and sift the flour, mix thoroughly
Do not be afraid that the dough turned out to be thick, because now we add spinach and mix everything
If the dough is still thick, add milk in portions. Then pour in more oil and stir everything well again. We give the dough a little time to rest and bake pancakes in a dry frying pan
While the pancakes are cooling, prepare the filling. To do this, cut the herring fillet into small cubes
Now add cream cheese, chopped greens and mayonnaise to the fish slices, if desired, mix the entire contents
Put the filling in the middle of each pancake, collect everything in a bag, tie it with a stalk of green onions

Festive salad "Christmas wreath"

Ingredients:
- 300 g chicken fillet;
- 350 g of pickled mushrooms;
- 250 g pineapple (canned);
- 100 g of hard cheese;
- 4 eggs;
- 1 onion;
- dill and cherry for decoration.
For refueling:
- 300 ml of yogurt (thick);
- 1 tbsp. l. mustard.
Marinade for onions:
- 100 ml of water;
- 1 tbsp. l. vinegar;
- 0.5 tsp salt;
- 1 tbsp. l. Sahara.
Preparation:
First you need to pre-pickle the onions. To do this, the onion must be peeled, chopped finely and mixed with salt and sugar. After filling with water and vinegar, leave for 10 minutes
At this time, we cut the pickled champignons, if the caps are small, then we cut them in half or into 4 parts
We cut the poultry fillet boiled with the addition of salt and other spices into small cubes, but you can simply disassemble the meat into fibers
We take out the pineapples from the jar and also cut them into small pieces
Now put the meat, mushrooms, grated cheese on a fine grater, as well as boiled eggs in a bowl, which we also grind only on a coarse grater
Drain the marinade from the onion, add to the rest of the ingredients and mix everything
For dressing, mix thick yogurt with mustard and pour into the salad, stir

Christmas Candle Salad

Ingredients:
- 400 g smoked chicken;
- 2 potato tubers;
- 3 eggs;
- 3 pickled cucumbers;
- 1 onion;
- 1 carrot;
- 20 g of cheese;
- Dill;
- mayonnaise.
Preparation:
Separate the smoked chicken meat from the skin and bones, disassemble it into pieces with your hands

Sprinkle a layer of potatoes with onions, which we chop into cubes and put a net of mayonnaise on top

Grease the egg layer with mayonnaise and lay the dill sprigs on top of the salad
Decorate the finished salad with candles. To do this, we cut out the candles themselves from the cheese using a curly knife. We make a small hole in them and insert a light cut out of carrots.
Chicken jelly for Christmas - a dietary option
Aspic is a traditional dish on the Christmas table. As a rule, it is prepared from pork legs and drumsticks. But today there is a lighter, simpler and just as tasty option - with chicken.
Ingredients:
- 2 kg of chicken (breast or drumstick);
- 1 onion;
- 1 carrot;
- 50 g green peas;
- 10 g gelatin;
- Bay leaf;
- spices to taste.
Preparation:
Put chicken in a saucepan, fill it with water, put peeled carrots and onions. And also add bay leaves, peppercorns, salt to taste and, if desired, dried garlic
After boiling, be sure to remove the foam and simmer the broth over the lowest heat for 2 hours
Then we separate the meat from the bones and disassemble it into fibers
Pour gelatin with water, stir and give it time to completely dissolve
At this time, we lay out the meat pieces in shapes, sprinkle green peas on top and lay out the figures cut from boiled carrots
Then pour the gelatin into the broth through a sieve, stir
Fill the molds with gelatin with broth and send them to a cool place for 8-10 hours
After the mold, we take it out, put it in a container with hot water for a few seconds, apply the dish and turn it over. We decorate the jellied meat with herbs, lemon slices and serve.
Christmas turkey

Ingredients:
- Turkey;
- 3 apples;
- 2 oranges;
- 1 lemon;
- 200 g butter;
- celery stalks;
- 1 onion;
- 6 cloves of garlic;
- white peppercorns;
- ground white pepper;
- salt.
Preparation:
To begin with, prepare the marinade and for this, pour salt into a saucepan of water at the rate of 1 tbsp. l. for 1 liter of water. Put half a lemon, an orange cut into 4 parts and 2 celery stalks into 5 parts. And also coarsely chopped 3 cloves of garlic and parsley, a few peas of black pepper
We wash the turkey well, put it in a suitable container, fill it with marinade and leave it for 8 hours, or better for a day
For the filling, cut the orange and apples into slices, and also cut the remaining celery stalks into large pieces
Pour white pepper into the softened butter and stir
We take out the turkey from the marinade, dry it with paper towels outside and inside
Now we gently push our hand between the skin and the breast, make a pocket. And then generously grease the inside of the pocket with butter, and then the entire surface of the carcass
Put the prepared fruits, celery inside and tie the turkey legs
Put celery in a deep baking sheet, the remaining fruit, onion, chopped into large pieces, herbs, pour in a little water and put a wire rack on top
We put the carcass on the grate, wrap the wings under the back and put it in an oven preheated to 180 ° C
Every hour we grease the turkey with the remaining oil, 1-1.5 hours after it was sent to bake, cover with foil and cook until the juice is transparent. But the exact time can be calculated from the weight of the carcass, so it takes about 40 minutes for 1 kg of meat.
