Peter Schieberle and his colleagues at the Technical University in Munich have found that chocolate and cocoa do not have a special volatile molecule that would have a "chocolate" smell. Scientists have found about 600 molecules in cocoa powder that form a "mosaic" of chocolate flavor. Some of them arise during the primary processing of cocoa beans, others - during their frying and grinding, and still others - already in the human mouth. Individually, these molecules smell like potato chips, fried meat and cabbage, cucumbers, honey, and even human sweat.

Meanwhile, scientists from the University of Cambridge concluded that higher chocolate consumption is directly correlated with a lower risk of heart disease.

"High consumption of chocolate reduces the risk of cardiovascular disease by 37% and the risk of stroke by 29%," the researchers note. Moreover, the analysis showed that both dark and milk chocolate act equally well on the body as a prophylactic agent.
