Kuban cabbage salad - a classic recipe
The Kuban salad for the winter does not have clear recommendations for cooking; you can use any vegetables that are left in the garden. But most often it is made from cabbage with the addition of tomatoes, carrots and other vegetables as desired.
Ingredients:
- 2 kg of cabbage;
- 2 kg of tomatoes;
- 1.5 kg of carrots;
- 1.5 kg of cucumbers;
- 1.5 kg of bell pepper;
- 2 hot peppers;
- 30 black peppercorns;
- 6 bay leaves;
- 500 ml of vegetable oil;
- 200 ml of table vinegar (9%);
- 150 g sugar;
- 4 tbsp. l. salt.
Preparation:
- Pre-soak the cucumbers in clean ice water for 2 hours.
- In any convenient way, chop white cabbage into thin strips.
- Add a little salt to the chopped cabbage so that it settles and does not take up much space in the pan.
- We take sweet peppers of any color, the main thing is that it is juicy and fleshy.
- Remove the stalk with seeds from the pepper and cut into strips.
- Cut tomatoes with dense pulp into arbitrary pieces.
- We cut hot peppers peeled from seeds into thin strips, but if someone likes it sharper, we leave the seeds.
- Cut the cucumbers into circles or semicircles 5 mm thick.
- In the course of chopping, we shift the vegetables into a convenient saucepan, add carrots grated on a coarse or Korean grater.
- We also pour a little settled cabbage into a saucepan, then crumb a bay leaf, put black pepper.
- Fill in the sugar, the remaining salt, pour in the oil and vinegar, mix everything gently.
- We leave the vegetables under the lid for 1 hour, so that they marinate and give juice. After that, we fill the clean jars with salad and be sure to evenly distribute the released juice over the jars.
- We send jars of Kuban salad for sterilization for 20-30 minutes (depending on the volume), then we roll it up.
For the salad, use not young cabbage, but dense and preferably with light leaves, since dark cabbage is too tough.
Kuban salad without sterilization
Today there are different recipes for vegetable preparation; for the winter, you can preserve the Kuban salad without sterilization. We choose vegetables to your taste: cabbage, tomatoes, cucumbers, etc.
Ingredients:
- 1 kg of tomatoes;
- 1 kg of cabbage;
- 1 kg of cucumbers;
- 1 kg of sweet pepper;
- 500 g onions;
- 500 g carrots;
- 1, 5 Art. l. salt;
- 100 g sugar;
- 250 ml of vegetable oil;
- 150 ml vinegar (9%);
- 20 peas of black pepper;
- 10 bay leaves;
- hot pepper if desired.
Preparation:
Shred the cabbage, add a little salt from the total amount, knead it with your hands so that the white vegetable gives juice
Cut the stalk from the tomatoes and cut it into small slices, like for a salad. We also cut cucumbers into circles
- Chop the onion in half rings, and chop the bell peppers and carrots into strips.
- In a common saucepan, mix all the vegetables, adding sugar, oil, the remaining salt, bay leaf and peppercorns to them. We also pour in vinegar, but not all, but a third of the norm. Mix everything thoroughly.
- The salad should be marinated, so we leave it for 1 hour, and then we send it to the fire.

"Kubansky" salad of eggplants and beans

Ingredients:
- 2 kg eggplant;
- 500 g beans;
- 500 g bell pepper;
- 600 g onions;
- 2 heads of garlic;
- 2 kg of tomatoes;
- 2 hot peppers (optional);
- 2 tbsp. l. salt;
- 150 g sugar;
- 1 glass of vegetable oil;
- 100 ml vinegar (6%);
- any greens to taste.
Preparation:
- The salad is prepared quickly. We set aside the eggplants, beans and greens for now, but we twist the tomatoes, sweet and hot peppers if desired, onions and garlic in a meat grinder.
- We put the twisted vegetables on the stove, immediately pour in the oil, add sugar and salt, stir and wait until the vegetable mixture boils.
- At this time, we cut the eggplants into arbitrary cubes.
- Finely chop any greens, you can take purple basil and cilantro.
- Put eggplants in the boiled mixture, after boiling, cook for 40 minutes.
- Then add the beans and herbs, mix, let it boil, cook for 15 minutes.

Preparation:
- In each clean jar we put a bay leaf, 5 black peppercorns and 2 allspice peas.
- Let's prepare vegetables for the salad. We chop the onion in half rings and, if desired, disassemble it into petals.
- Cut the bell peppers into thin strips. You can take a vegetable of different colors, then the salad will turn out delicious and even more beautiful.
From cucumbers, which it is advisable to hold in cold water for several hours, cut off the stalks, and then cut them into circles
Green tomatoes can also be cut into half circles or small wedges
- Chop the garlic with thin petals and chop the parsley with the stalks.
- Now we send all the vegetables and herbs to a common bowl, add salt and sugar to them, pour in the oil and all the vinegar at once.

For salad, it is better to use sweet red and yellow peppers, since light and green peppers do not have such a rich taste.
"Kubansky" salad with zucchini
Each housewife can come up with her own recipes for winter harvesting. So for the winter you can prepare a Kuban salad with zucchini. It is prepared simply, but it turns out to be very tasty.
Ingredients:
- 2 kg of cabbage;
- 1 kg of cucumbers;
- 1 kg of tomatoes;
- 500 g carrots;
- 500 g bell pepper;
- 500 g zucchini;
- 500 g onions;
- 1 pod of hot pepper;
- 1 bunch of dill;
- 1 bunch of parsley;
- 100 ml of vegetable oil;
- 120 g salt;
- 120 g sugar;
- 150 ml vinegar (9%).
Preparation:
Cut out the stalk of tomatoes. Tomatoes can be used ripe, brown or green. Cut the tomatoes into half rings 3-4 mm thick
- Grind onion and peeled zucchini in the same way.
- Shred cabbage and bell peppers with strips.
- Grind the carrots using a Korean or regular grater. If there are no vegetables, then we increase the number of those that are, but only the cabbage needs to be taken in full.
- To add light pungency, we cut a pod of hot pepper, which we pre-clean from seeds.
- Finely chop parsley and dill with thin stalks.
- Now we transfer all vegetables, except hot peppers and herbs, to a large bowl or saucepan.
- Next, add salt, sugar and pour in vinegar, mix everything well and leave the vegetable preparation for several hours so that the juice stands out.
- Then add hot peppers, herbs, pour in oil, mix everything well and the salad is ready for sterilization.
- After boiling, sterilize jars of salad for no more than 10 minutes from the moment of boiling, and then roll up.
The main thing in this recipe is not to overcook vegetables, then they turn out like fresh.
Kuban salad in tomato sauce
Kuban salad in tomato sauce is another option for preparing for the winter without sterilization. Be sure to try this recipe, the appetizer turns out to be very tasty.
Ingredients:
- 2 kg of zucchini;
- 1.5 kg of carrots;
- 1.5 kg of onions;
- 200 ml of vegetable oil;
- 270 g tomato paste;
- 100 g sugar;
- 50 g salt;
- 1 tbsp. l. vinegar essence (70%).
Preparation:
- First, let's prepare the vegetables. We chop the onion in quarter rings, but not too thinly, it should be felt in the salad.
- Grind the carrots on a coarse grater.
- Cut the zucchini into medium-sized cubes. If the vegetable is young, then peeling off the skin is optional.
- Pour oil into a cauldron or a saucepan with a thick bottom. It is good if it is fragrant, that is, unrefined. We heat it up.
- Add the onion and fry it lightly, and then add the carrots to it. Mix vegetables and fry for 15 minutes.
- Then add good quality tomato paste, mix and fry the vegetables for 5-10 minutes.
- Now add the zucchini to the onions and carrots, mix and after 5 minutes add salt along with sugar.
- Simmer the salad for 7-10 minutes and add vinegar, stir, wait another 5 minutes and roll up the salad in sterile jars.
You can also use fresh tomatoes for salad, but with tomato paste, the salad turns out to be thick and rich.
