To diversify your meals in winter and give them the freshness of a sunny summer, we recommend freezing green onions in the refrigerator. For these purposes, it is better to take bags with a Zip-Lock lock, they are more dense.
Preparation of raw materials
This is a mandatory procedure for all products that need to be frozen for the winter in the refrigerator in bags. Make sure the green onion nibs are free of damaged or gray areas, dry tips and mold before you start directly with the work. Naturally, the vegetable should be as fresh and young as possible.
Now we sort out the green feathers from the debris and thoroughly rinse them under the tap. Put on a cloth towel or sieve and let the water drain. To freeze in the refrigerator, all feathers must be dry so that they do not get lost in one frozen ball and retain their color and structure well.
No blanching
This is a very easy way to freeze green onions for the winter in the refrigerator in bags. First, separate the green part of the plant from the white bases so that the mass is uniform in color and texture.
Would need:
- sharp knife;
- cutting board;
- feathers of green onions;
- bags with a lock.
Preparation:
- Fold the onion feathers in small portions. It is better not to do large bunches so as not to injure the delicate structure of the plant.
- Chop the prepared greens into pieces 1 cm long.
- We fill the bags with the onion mass by 2/3, straighten them along the plane and release the air.
- We fasten the package, send it to the freezer.
From time to time we take out stocks and shake them so that the onions do not become one continuous lump.
Blanched
In this case, the onions frozen in bags in the refrigerator for the winter will retain their bright color and will be softer in taste. It is suitable for both first courses and various cold appetizers.
You will need:
- several pots of different diameters;
- food ice cubes;
- colander;
- bags for food or with a clasp;
- green onions.
Preparation:
We wash and dry young feathers, chop them into small rings
- We put a pot of water on the stove, bring to a boil. In a separate bowl, fill the ice with tap water. The more ice the better.
- We lower the workpiece in a hot liquid for 5 minutes, immediately take it out and immediately send the onion into ice water. This procedure will help stop the heating process, due to which the feathers will retain their bright green color.
- We drain the liquid, let the pieces drain in a colander. Now all that remains is to dry them. The less moisture remains on them, the better they will look in the workpiece.
- We lay out the dried raw materials in bags with fasteners, close the slider by 2/3 fasteners and, spreading the package on the table, release the remaining air from the package.
- We send the workpiece to the freezer.
For the first 2-3 hours, it is necessary to remove the blanks with onions from the refrigerator and shake them slightly so that the mass does not turn into a large ice ball. Loose frozen food is always much more convenient to use.
With butter
This preparation is very good if there is an abundance of thin shallots. In addition, the product frozen in this way in the refrigerator for the winter in bags can be mixed with spicy herbs and then used in various dishes as a filling.
For example, a slice of ready-made spicy butter is suitable for chicken rolls or Kiev cutlets.
Ingredients:
- butter;
- feathers of young onions;
- food bags (regular);
- favorite seasonings and spices - at will and in any amount.
Preparation:
Finely chop the washed dried feathers and spicy herbs. If dill or parsley is used for joint freezing, all large stems should be removed so that they do not spoil the appearance of the workpiece
Mix prepared vegetables with softened butter
- We roll the resulting blank into small sausages using cling film or foil.
- We send everything to the freezer for several hours.
- Cut the frozen mass into portioned pieces and put them in bags in several layers. The triple pack will help preserve the flavor of the herbs and will not transfer it to other foods in the freezer.
We send green oil for storage in the freezer, use it as needed.
Shelf life of frozen onions
When kept continuously in the freezer, the product retains its taste for about six months. If all the manipulations for freezing green onions in the refrigerator for the winter were carried out correctly, before turning off the stove, add some frozen pieces to the soup or stew. Then the aroma of a ready-made treat on a cold winter day will remind you of a sunny summer.
