Preparation:
Rinse the chicken carcass, dry with paper towels
Remove the ridge with a sharp knife. In the place where the skin is close to the spine, cut very carefully, taking care not to damage its integrity

- Then continue to further cut the meat along the spine.
- Cut the ribs, and then pull out the ridge with your hands along with the neck.
