- Put mackerel in a deep saucepan, add bay leaf, peeled shallots and carrots. Sprinkle with a pinch of thyme and pour over with white wine. Add ground pepper and salt to taste. Place over medium heat and bring to a boil. Then cover the pan with a lid and remove from the stove, chill for 15 minutes.
- Remove bones and skin from fish, knead until smooth with a fork. Strain the remaining broth through a sieve.
