Ingredients:
- 1 kg of chokeberry;
- 1, 2 kg of sugar;
- 250 ml of water;
- 5 g vanillin (optional)
Preparation:
- We sort out the rowan, rinse it several times under running water, transfer it to a saucepan.
- Pour hot water into the berries, put on low heat and blanch for 10 minutes.
- Pour sugar over the mountain ash, mix and cook for 10 minutes, while not forgetting to remove the foam.
- Then we remove the jam from the heat and give it time to cool completely, then return it to the stove and let it boil. Add vanillin if desired, mix and cook the jam for 15 minutes.
- Fill sterile jars with ready-made hot dessert and tighten the lids tightly.
Chokeberry jam can be used as a filling for buns, pies and other baked goods.

Chokeberry jam with orange
You can replenish the collection of winter preparations with chokeberry jam with orange. Berries go well with citrus fruits, which enrich and soften the taste of rowan. The jam turns out to be incredibly spicy and aromatic.
Ingredients:
- 350 g of chokeberry;
- 1 orange;
- 500 g of sugar.
Preparation:
Rinse the orange, scald with boiling water. We peel off the zest, peel the pulp from white films and cut into pieces
- Rinse rowan berries, pour into a bowl, fill with hot water and leave for an hour. After we drain the water, it will no longer be needed, and pour the berries themselves into the bowl.
- Put slices of orange pulp in a bowl with mountain ash and punch with an immersion blender.
Add the orange zest to the resulting puree, add sugar, stir well and leave on the table for 3-4 hours
After that, pour the contents of the bowl into a saucepan, put on the stove and cook over low heat for 40 minutes from the moment of boiling
- Then the jam should be infused for at least 6 hours. Then we cook the second time, but for 20 minutes.
- Fill clean dry jars with hot jam and tighten the lids tightly.
If you make jam only from some rowan berries, then you can add citric acid, it also neutralizes astringents.
Chokeberry jam with apples
There are different recipes for chokeberry jam. So, for the winter you can prepare a delicious and aromatic dessert with apples. Thanks to the tannins of the mountain ash, the apple pieces remain intact and do not boil.
Ingredients:
- 500 g of chokeberry;
- 300-400 g of apples;
- 500 g sugar;
- 1 glass of water.
Preparation:
- We lay out the prepared clean mountain ash without petioles on a flat surface and send it to the freezer for 6 hours.
- We boil a syrup from water and 200 g of sugar, in which we then pour the berries directly in frozen form. Cook from the moment of boiling for 40 minutes.
Cut the apples, peeled from the peel and seed box, into thin plates, transfer them to a saucepan with mountain ash
Next, pour the remaining sugar, mix, cook for 40 minutes under the lid
After the first cooking, we keep the jam for 6 hours. Then we boil it a second time for 20 minutes and lay it out in clean cans, tighten the lids
Rowan juice stains hands and dishes for a long time, and if it gets on clothes, it is very difficult to wash it off. Therefore, it is better to handle the berries with gloves, and wipe off unwanted stains immediately.
"LIVE" chokeberry jam
