- apples - 1, 8 kg;
- sugar - 1.5 kg;

- If we use a salty solution, then rinse the apple slices in running water before cooking (skip this step with an acidified solution and, after draining the water, immediately start cooking).
- After sprinkling the layers of apple slices with sugar, leave for 8-10 hours, covering with a lid and a cloth from the light, in a cool place.
- When raw, the thin apple wedges are very fragile and will break, even with gentle stirring. Put the container with fruit slices, which let the juice out, on the fire with a divider, without stirring.
- We will cook the jam in three steps according to the well-known scheme: heating to a boil, boiling at a low boil (5 minutes), cooling until it cools completely (8-10 hours).
Before the third cycle, divide the jam into three parts, each of which we bring to a boil in turn. We do not add anything to one part, boil for 5 minutes and roll it into jars
Add cinnamon and mint to each of the two remaining parts, respectively, then boil for 5 minutes and seal. We extract the mint leaves before distribution to the banks.
Amber jam from Antonovka with a reduced sugar content
For the winter, you can make very tasty transparent jam with slices from Antonovka with a minimum amount of sugar.
Ingredients:
- apples of the Antonovka variety - 800 g;
- sugar - 300 g;
- water - 2 tbsp.;
- citric acid - 1 tsp
Preparation:
- Since we will cook our transparent delicacy in one step, we will not wait for the release of juice, we will immediately start cooking by adding water.
- For ripe or lying fruits, cook the syrup by mixing water with sugar and heating to a boil.
Until the syrup reaches the desired condition, prepare the apples, rinse, peel and cut into thin slices. The change in the color of the slices should not scare you, this fact will not affect the quality of the jam
We spread the fruit slices in the syrup in portions, each portion carefully so as not to damage the integrity of the slices, "drown" in a sweet mass without stirring
- After waiting for the entire jam to boil again, reduce the heat and cook at a low boil for 30-40 minutes (or more to obtain the desired color). It is better to put a fire divider on the burner first.
- Stir with more confident movements 10-15 minutes after cooking the sweet delicacy. By this time, the apple slices will be more elastic.
After cooking, we proceed with the jam in the standard way, making the blanks for future use.
