Pitted cherry jam is a favorite delicacy of adults and children. The dessert has a rich taste, color and aroma. We offer a recipe with a photo "Five minutes", as well as other options for tasty and sweet preparations for the winter.
Cherry jam "Pyatiminutka"
Pitted Pyatiminutka cherry jam is an easy way to prepare a delicious dessert for the winter. At the same time, the jam turns out to be very bright and fragrant.
Ingredients:
- 1 kg of cherries;
- 1, 2 kg of sugar.
Preparation:
In any convenient way, we extract the seeds from the cherries, then send the berries to the pan
Next, add granulated sugar, mix. Leave the cherries for 3 hours to dissolve the sugar. During this time, mix the berries several times
- We put the saucepan on the stove and, with constant stirring, bring the jam to a boil.
- Then, without stopping stirring, cook for exactly 5 minutes.
Pour the finished dessert directly hot into sterile jars, tightly tighten the lids
For jam, it is best to use mid-season or late varieties of dark red cherries. They are higher in sugar, fiber and antioxidants.
The most delicious cherry jam
The simplest pitted cherry jam "Pyatiminutka" involves the use of only two ingredients: berries and sugar. But there is a more interesting recipe with a photo that I want to share.
Ingredients:
- 1 kg of cherries;
- 1 kg of sugar;
- zest of 1 lemon;
- 1 tsp liquor.
Preparation:
Sprinkle the pitted cherries with the released juice with sugar. We leave for a few hours
- As soon as the bottom layer of granulated sugar becomes wet, put on the lowest heat and wait until the sugar begins to dissolve.
- After heating, we increase, bring to a boil, cook for 5 minutes, or 3 minutes is possible.
- Then turn off the fire, remove the foam and leave the cherry in the syrup for 3-4 hours (as long as possible).
- We repeat the process of five-minute cooking with interruptions several times.
- In the last cooking, add the zest of one lemon and liqueur to the cherry.
Pour the finished jam into sterile jars and, rolling up the lids, leave it upside down until it cools completely
The cooking time depends on how much juice the cherry has given and on the desired thickness of the jam: from 3 to 6 times.
Cherry jam without boiling berries
It's no secret that heat treatment kills most of the vitamins, so some housewives prefer to cook jam without boiling. And if you want to get not only a delicious, but also a healthy dessert, then the proposed recipe with a photo should be taken into account.
Ingredients:
- 1 kg of cherries;
- 1 kg of sugar;
- 200 ml of water;
- 2-3 g of citric acid.
Preparation:
- We wash the cherries well under running water. If the fruits are small, then the seeds can be left (at the discretion).
- Pour sugar into a saucepan with a thick bottom, pour in water and stir everything thoroughly so that the granulated sugar does not burn.
- We put it on fire, wait for it to boil, add citric acid and cook the syrup for 12-13 minutes.
- Then pour the cherry with hot syrup and leave for 10 minutes.
- Then we pour it back into the pan, put it on the fire again, cook for 6-7 minutes, no longer.
- Fill the berries with syrup, do not interfere with anything, leave under the lid for 20 minutes.
- We drain it for the third time, and we are already laying out the berries in sterilized jars.
- Cook the syrup for 6-7 minutes, remove the foam and pour it into jars with berries, tighten the lids.
You can also cook jam from early cherries, but they have little fiber and a lot of water.
Cherry Jam with Gelatin
You can cook seedless cherry jam according to the recipe "Five Minute" with the addition of gelatin. The dessert turns out to be not only fragrant and tasty, but also thick, as in the photo. Therefore, the jam can be used to bake rolls, pies, croissants, etc.
Ingredients:
- 2 kg of cherries;
- 1.4 kg of sugar;
- 40 g gelatin;
- 100 ml of water.
Preparation:
- We thoroughly wash the cherries and remove the seeds in any convenient way, you can even use a regular pin. It is advisable to pre-soak the berries in cold water for 2 hours, so you can check if there are worms in the berries.
- Sprinkle the cherry pulp with sugar, leave in a cool place for 10-12 hours, that is, you can prepare everything in the evening and leave overnight.
After the berries, we send them to the fire, and pour the instant gelatin with hot boiled water and stir thoroughly
- As soon as the cherry boils, cook for 5 minutes, but preferably 10.
- Remove from heat, add gelatin, and pour the finished jam into sterile jars.
It is not necessary to use gelatin, you can take pectin and agar-agar, which is loved by many housewives. It is a herbal component.
Cherry jam with black currant
Cherries go well with various fruits and berries, so you can always cook jam with a different flavor. For example, a very tasty, aromatic and thick pitted cherry delicacy "Pyatiminutka" is made with black currant.
Ingredients:
- 1 kg of cherries;
- 1 kg of black currant;
- 1 kg of sugar.
Preparation:
- We sort out the black currant berries from small twigs, rinse well and punch with a submersible blender. You don't need to achieve perfect puree: if some of the berries remain intact, it's okay.
- Pour half of the sugar into the grated currants, mix and put on low heat.
- At this time, we will prepare the cherries: we wash the fruits well and remove the seeds.
- Bring the currants to a boil, pour the remaining sugar into the cherry and also on low heat, stirring occasionally, bring to a boil.
Cook the jam for 5 to 15 minutes - it all depends on the desired thickness. Then we lay out on sterile jars
When picking cherries, it is better to pluck together with the stalk, so the juice will be preserved and yeast and fungi will not be able to penetrate inside.
Cherry jam with black tea and mint
We offer a very unusual recipe for "Five Minute" jam from pitted cherries, which combines the aromas and flavors of mint, lemon and the berries themselves. The delicacy really tastes very interesting.
Ingredients:
- 1 kg of cherries (pitted);
- 1 kg of sugar;
- 1 tbsp. l. lemon juice;
- 3-4 mint leaves;
- 100 ml of tea with mint and lemon.
Preparation:
- Pour boiling water over two tea bags (one with lemon, the other with mint) and let it brew.
- Pour all the sugar and the cherries already pitted into a saucepan or bowl for making jam. Stir and leave the berries for a while so that they let the juice out.
Then pour strong tea, lemon juice to the cherry, mix gently
- We put the container on fire, help the sugar dissolve faster, wait for it to boil.
- Cook the cherries in syrup for 25 minutes, remove the foam in the process, then put the mint leaves.
After 5 minutes, remove the mint, and put the finished jam in sterile jars
The fresher the cherry, the less foam there will be. For jam, you can brew regular tea or try the bergamot version.
Cherries with chocolate
Cherry jam with chocolate is a delicious dessert. Having opened a jar with such a delicacy in winter, you will be grateful for such a recipe.
Ingredients:
- 2 kg of cherries;
- 700 g sugar;
- 100 g of almonds;
- 100 g dark chocolate (70% cocoa).
Preparation:
Pour the prepared cherries (with or without seeds) into a saucepan along with granulated sugar, mix and put on fire
- While the sugar gradually begins to melt, grind the pre-fried almonds in a blender.
- Pour the chopped nuts into a saucepan with cherries, mix gently.
- Rub dark chocolate with a cocoa content of at least 70% on a fine grater.
- As soon as the cherry boils, let it simmer for 5 minutes over low heat and only then add the grated chocolate.
Stir, turn off the heat and pour amazingly tasty jam into sterile jars
Some housewives add regular cocoa powder and cocoa butter or butter instead of dark chocolate.
With orange and cinnamon
Cherries go well with citrus fruits and various spices. And to make sure of this, we suggest boiling cherry jam with orange and cinnamon.
Ingredients:
- 1 kg of cherries;
- 500-700 g sugar;
- 2 oranges;
- 1 tsp cinnamon.
Preparation:
Using a special device or an ordinary hairpin, remove the seeds from the cherries
- After the pulp, sprinkle with sugar, leave for 2 hours so that the berries give juice.
- Then we put the container with cherries on the fire, wait for the boil, remove the foam and boil for 5 minutes. Leave the berries to cool (preferably overnight).
- We wash the orange well, it is even better to rub it with a brush. Cut into slices right along with the peel and put in a saucepan with cherries.
- Boil the cherry and orange until the desired thickness is 10 to 15 minutes.
At the end, add cinnamon, cook the jam for another 5 minutes and put it in sterile jars
Small white worms can often be found in cherries, but it is very easy to drive them out. It is enough to hold the berries for 2 hours in a salty solution (for 1 liter of water - 10 g of table salt).
Spicy cherry jam with nuts
Another recipe for a cherry dessert for the winter that deserves special attention. This is a spicy cherry jam with nuts. The delicacy turns out to be not only tasty, but also aromatic due to the fact that different spices are used in the preparation.
Ingredients:
- 300 g cherries;
- 100 g cashew nuts;
- 150 g sugar;
- cinnamon, star anise;
- allspice peas;
- mint;
- 50 ml of water.
Preparation:
We take out the seeds from the cherries. Put the berries together with granulated sugar in a saucepan and, covering with a lid, put it on the fire
At this time, pour the nuts into a preheated dry frying pan and fry them well
- Add a cinnamon stick, three allspice peas and the same number of star anise stars to the cherry. We put three sprigs of mint.
- We alter everything, pour in water and, as soon as the sugar completely melts, remove the mint.
Fill in the nuts, bring to a boil and cook the jam for literally 2 minutes. Then we transfer to a jar and store in a cool place or at room temperature for up to 1 year
Cherry jam can be cooked in the oven at 75-80 ° C. True, this will take at least 5 hours. The oven door must be slightly open.
Cherry, currant and strawberry jam
Cherries, strawberries and currants are an amazing combination of flavors, and what a delicious jam is it! In this case, the berries are soaked in syrup and retain their shape. We definitely recommend preparing such a dessert for the winter.
Ingredients:
- 250 g strawberries;
- 250 g black currant;
- 900 g cherries;
- 2 kg of sugar.
Preparation:
- We rinse all the berries well under running water. We take out the seeds from the cherries, remove the stalks from the strawberries and currants.
- Pour strawberries and currants into a saucepan, sprinkle with half granulated sugar on top.
- Then spread out the cherries and the remaining sugar. We leave the berry platter for a few hours so that the juice stands out.
- After the contents of the pan, gently mix, put on fire and after boiling, boil for 10 minutes. Remove the foam during the cooking process.
- We leave the berries until they cool completely, you can overnight.
- Then we cook the jam again, but no more than 5 minutes. Do not forget to remove the foam.
We lay out the finished berry jam in sterile jars
You can easily find out how much sugar is required for cherry jam based on the weight of the berries themselves. So, a cherry with a stone weighs 5-6 g, and without a stone - 2 times less.
Cherries with chocolate and cognac
If you like "Cherry in cognac" sweets, then you will definitely fall in love with cherry jam with chocolate and the addition of aromatic alcohol. And preparing such a dessert for the winter is very simple.
Ingredients:
- 1 kg of cherries;
- 600 g of sand;
- 100 g of dark chocolate;
- 1 tbsp. cocoa;
- 50 ml of brandy.
Preparation:
- We transfer the already pitted cherries to a basin or saucepan, add sugar and leave for an hour.
- After we put on fire and boil the berries for 30 minutes, start counting from the minute of boiling.
- Dilute with cognac in a cup of cocoa.
- Put pieces of dark chocolate in the jam and immediately pour in the cognac with cocoa.
- Cook for another 8-10 minutes and lay out the finished dessert in sterile jars.
If cherry jam is cooked in the traditional way, then the ratio of berries to sugar is 1: 1. If you want to shorten the cooking time, but at the same time get a thick syrup, then the amount of granulated sugar should be increased to 50%.
Cherry jam "Pyatiminutka" is a tasty and aromatic delicacy for the winter. But even today, disputes about how to cook it better - without seeds or with them, do not subside. It all depends on the choice of the hostess, but it is worth knowing that removing the seeds will lead to loss of juice, oxidation and destruction of vitamin C and a longer cooking process.
If you cook with seeds, you can save time on preparing the berries, while the fruits themselves in the finished dessert remain intact. The seeds give the jam a light almond flavor due to the content of hydrocyanic acid in them.
