Preparation:

Preparation:
- Cut a layer of puff pastry into squares. Then we fold each in half, pinch the edges and form boats.
- We transfer them to a baking sheet with parchment, completely grease with whipped yolk, sprinkle with poppy seeds and put in the oven for 20-25 minutes (temperature 180 ° C).
- After that, push the middle of the boats a little and fill with cream cheese.

- 50 g of cheese;
- 2 boiled eggs;

Ingredients:
- 2 slices of rye bread;
- 150 g of boiled beets;
- 100 g lightly salted herring;
- 30 g lemon;
- 150 ml mayonnaise;
- 2 g ground coriander;
- 10 g gelatin;
- 5 green onions;
- salt.
Preparation:
- Soak the sheet gelatin in cold water and set it aside for now.
- At this time, we take the pre-boiled beets, clean them, cut them into pieces and, together with mayonnaise, lemon juice, salt and coriander, send them to a blender.
- Beat until smooth.
- Bring the gelatin to a liquid state over the lowest heat and add to the beet mass, interrupt again.
- Cut the herring fillet into small pieces, add finely chopped green onions and a little oil to the fish, mix.
- With the help of pastry rings, we cut out the base for the black bread salad.
- We rearrange the tins along with the bread on a baking sheet, put the fish on the center with a slide.
- Cover the herring with beetroot mousse.

Ingredients:
- 1 chicken fillet;
- 2 potato tubers;
- 300 g carrots;
- 300 g of beets;
- 4-5 eggs;
- 2 cloves of garlic;
- 250 ml mayonnaise;
- 3 tbsp. l. ready-made gelatin;
- parsley.
Preparation:
Cut the boiled poultry into small cubes
- Grind the potatoes on a coarse grater.
- We also rub the beets on a coarse grater, do not pour out the released juice.
Separate the yolks from the proteins, pass through a grater, add to the potatoes, salt a little and mix
Using a grater, grind the proteins, pour in the beet juice and mix
Add the melted gelatin to the mayonnaise and stir
- Also 1 tbsp. add a spoonful of gelatin to the beets and mix.
- We take a rectangular shape and cover it with cling film.
- Put a couple of tablespoons of mayonnaise with the mass of potatoes and yolks, mix and put in the first layer in the form, level.

Add butter, nutmeg, dried garlic (optional) to the puree. Also add starch, drive in an egg and mix well. If the consistency of the potato mass turned out to be too liquid, then add starch, and if, on the contrary, it is very thick, then put a little more oil and drive in an egg
Now quickly transfer the puree into a pastry bag with an asterisk attachment and place it on a baking sheet with parchment
We send the baking sheet to the oven for 15-20 minutes (temperature 200 ° C)
Do not fry the potatoes strongly. As soon as the wavy edges are browned, we immediately take it out. Potato roses are crispy on the outside, but soft, delicate and aromatic puree remains inside.
Cake with white chocolate mousse and raspberries
Not a single New Year's table is complete without desserts. Of course, you can buy a confection in any cooking. Or you can simply and easily make a delicious cake with white chocolate and raspberry mousse. The dessert turns out to be so tasty and exquisite, as if it was prepared in a restaurant.
Ingredients:
- 3 eggs;
- 3 tbsp. l. flour;
- 80 g sugar;
- 50 g icing sugar;
- 30 ml lemon juice;
- 25 g butter;
- 100 g of white chocolate;
- 350 ml cream (30%);
- 200 g of cottage cheese;
- 3 ml of vanilla essence;
- 12 g gelatin;
- 200 g frozen raspberries;
- 50 ml of water;
- lemon zest.
Preparation:
- Pour 3 tbsp into a bowl of eggs. tablespoons of sugar and beat until the volume triples.
- Pour lemon juice and melted butter into the egg mixture, mix everything again.
- Add flour, stir with a whisk, pour the resulting dough into a rectangular shape with parchment. We put in the oven for 15-20 minutes (temperature 180 ° C).
- Cool the finished cake and cut it into two parts.
- Whisk 300 ml of cream until soft peaks, and then until firm foam with the addition of powdered sugar.
- Heat the remaining cream and pour the pieces of white chocolate, mix thoroughly so that it melts completely.
- Add vanilla essence, cottage cheese to the chocolate mixture and beat with a mixer until smooth at the lowest speed.
- Soak gelatin (6 g) in cold water, then melt and add to the curd-chocolate mass. Beat until smooth and creamy.
- Put the whipped cream into the white chocolate cream, stir.
- Grease the cakes with cream and put them in the freezer for 10 minutes.
- Add the remaining sugar to the raspberries, pour in 50 ml of water and lemon juice, put the zest of one lemon, stir.
- Heat the berries over medium heat for 10 minutes, and then rub through a sieve.
- Add melted gelatin, mix and remove for 10-20 minutes in a cool place.
- Put raspberry jelly on a layer of cream, level and set in the cold for 10 minutes.
- We put one cake on top of the other, grease with the remaining cream, level the surface and send it back to the cold for 10-20 minutes.
Now distribute the raspberry jelly on top with an even layer and put it in the refrigerator for 3 hours. Before serving, cut the cake into portions, decorate with raspberries and pieces of white chocolate.
