In 2022, Lent will begin on March 7 and will last until April 23, it is the longest and strictest. During fasting, you need to pray, visit temples, abstain from alcohol, the use of meat and dairy products. Therefore, every Orthodox Christian should know the daily food calendar for the laity in order to compose a fasting menu for 40 days.
Lent 2022 - basic rules
During the period of Lent, it is forbidden to eat products of animal origin, including dairy products. You should also give up sausages, eggs and alcohol.
The list of permitted foods is quite large: all types of cereals, pasta, vegetables, fruits, berries, spices, nuts, vegetable oils, sauces, lean bread and products made from water and flour.
If you look at the 40-day food calendar, the first week of Lent in 2022 is the most strict. On Monday, only water is allowed, but it is too difficult for lay people, so you can cook cold food without oil, just like Tuesday through Thursday. On Friday you can cook hot food, but no oil. It is only allowed on Saturday and Sunday.
The last week is also very strict. From Monday to Thursday only one meal is allowed, on Friday - a complete refusal to eat, on Saturday cold food. Sunday is Easter.
In the rest of the period, on Monday, Wednesday and Friday - dry eating days, Tuesday and Thursday - boiled (stewed) food without oil, on weekends - food with butter and a little wine.
On church holidays, such as Palm Sunday, you can cook fish and drink some wine.
Lenten menu for every day - 5 easy recipes
For the laity, it is not necessary to observe strict Great Lent; it is enough to prepare simple meatless meals according to the 2022 food calendar, every day for 40 days. We offer a sample menu of 5 simple yet delicious recipes for breakfast, lunch and dinner.
Breakfast
In the morning, you can make pancakes. Despite the fact that the dough is kneaded in plain water, the baked goods are tasty, with a pleasant vanilla aroma. Lean pancakes can be served with honey, syrup, jam, or any kind of jam.
Ingredients:
- 1, 5 Art. l. Sahara;
- a pinch of salt;
- 150 ml of water;
- ½ tsp soda;
- 1 bag of vanillin;
- 120 g flour;
- lemon juice.
Preparation:
- Pour salt into a bowl along with sugar and vanilla, pour in water (preferably warm so that all the crystals dissolve in it).
- Now we extinguish the soda with lemon juice, send it to a bowl, mix again.
- Sift flour in portions and knead the dough, fry the pancakes on both sides in a preheated pan with the addition of oil.
If the dough is too thick, just add some more warm water.
Dinner
Lenten lunch can be prepared in Georgian style. It will be beans in tomato sauce with mushrooms and nuts - very tasty, satisfying and aromatic.
Ingredients:
- 250 g champignons;
- 1 carrot;
- 1 can of beans in tomato sauce;
- 2 tbsp. l. spicy adjika;
- a handful of walnuts;
- a bunch of cilantro;
- dried garlic to taste;
- dried onions to taste.
Preparation:
- Cut the champignons into small pieces and poison them in a pan with heated oil.
- Immediately rub the carrots, add to the mushrooms, salt, pepper, sprinkle with dried garlic and onions, mix and fry until tender.
- Put the beans in tomato sauce in a pan, add spicy adjika, mix and simmer for several minutes.
- Finely chop the walnuts and cilantro.
- Add a little water to the beans with mushrooms, add the nuts, warm up for a couple of minutes and turn them off. Sprinkle the finished dish with cilantro and serve.
Cilantro can be replaced with parsley or any other greens, and do not add nuts, this is optional. It is not necessary to use dried garlic and onions; you can also use fresh vegetables.
Dinner
Dinner will be Italian style: macaroni with tomatoes and pesto sauce - quick, simple, but delicious. A light salad of fresh vegetables with avocado will suit them.
Ingredients:
- pasta (spaghetti);
- 10 cherry tomatoes;
- 4-5 st. l. pesto sauce.
For the salad:
- 2 cucumbers;
- 1 tomato;
- 6-8 radishes;
- 1 avocado
- a bunch of greens;
- 1 tbsp. l. lemon juice;
- 2-3 st. l. olive oil;
- a handful of pine nuts.
Preparation:
Pour any pasta into boiling water and cook according to the instructions until cooked
- Cut the cherry in half or quarters if the fruits are large.
- Drain the water from the pasta, add the sauce, cherry tomatoes, mix everything - dinner is ready.
- For the salad, simply chop the cucumber, radish and tomato.
- Peel the avocado, cut the pulp into cubes.
- We send everything to a salad bowl along with herbs, pour oil, lemon juice, mix and sprinkle with walnuts if desired.
The pesto sauce contains cheese, but you can make a lean version with your own hands. To do this, we send basil, some walnuts, garlic and oil to a blender, punch until smooth. Pepper and salt the prepared sauce to taste.
Bakery
Even in fasting, you can cook pastries, for this there are many lean recipes with photos. For example, charlotte with apples turns out to be very tender and quite tasty.
Ingredients:
- 250 ml of apple juice;
- 60 g of vegetable oil;
- 100 g sugar;
- 10 g baking powder;
- 10 g vanillin;
- 200 g flour;
- 1 apple;
- a pinch of salt.
Preparation:
- Pour juice and refined oil into a bowl.
- Next, add sugar, baking powder with vanilla and salt, sift flour. Knead thoroughly. The dough is ready, it turns out to be quite liquid.
Cut the peeled apple into slices, put it in a greased form and fill it with dough on top. We put in the oven for 40 minutes (temperature 180 ° C)
Such a pie can be prepared not only with apples - we take any berries and fruits that are at hand.
Lenten pies
The Lenten menu does not have to be bland and tasteless - there are different recipes with photos, thanks to which you can cook various and at the same time delicious dishes, even pies.
Ingredients:
- 120 ml of water;
- 70 ml of vegetable oil;
- 250 g flour;
- ½ tsp salt;
- ½ tsp Sahara.
For filling:
- 500 g of cabbage;
- 1 carrot;
- 1 onion;
- 1 tbsp. l. tomato paste;
- salt and pepper to taste.
Preparation:
- Pour room temperature water, oil into a bowl, add salt and sugar, mix well.
- Add the sifted flour in several steps and knead the soft dough.
- Put the dough in a bowl, cover with plastic wrap and let it rest while we prepare the filling.
- Rub the carrots on a coarse grater, finely chop the cabbage, cut a small onion into quarters.
- We heat the pan, pour oil, put onions and carrots, sauté literally for a minute.
- Add tomato paste to vegetables, mix, fry for a couple of minutes.
We send the cabbage into the pan, mix and simmer under the lid for 15 to 30 minutes until soft. 5 minutes before cooking, salt the filling, pepper and put the bay leaf
Roll out the dough into a sausage, divide into 16 pieces weighing about 25 g
Roll each piece thinly, lay out the filling, wrap it in a tube, tuck the edges a little
Put the pies on a baking sheet with parchment, grease with vegetable oil or tea leaves, bake for 15-20 minutes at 180 ° C
Absolutely any filling is suitable for such a test. It turns out very tasty with sauerkraut. If desired, the pies can be sprinkled with sesame or flax seeds before baking.
Lean lagman with beans
Laghman is a popular Central Asian dish made from meat, but there is also a lean recipe. Its peculiarity is that lagman is both a hot first course and a second one. It is delicious, satisfying and nutritious.
Ingredients:
- 1 carrot;
- 2-3 onions;
- 1 sweet pepper;
- 1 tomato;
- 1 can of beans
- 2-3 st. l. tomato paste;
- 2 potato tubers;
- seasonings to taste, salt;
- noodles.
Preparation:
Cut the onion and bell peppers, peeled from seeds, into half rings
Peel off the skin from the tomato, cut into small cubes. Cut the peeled potato tubers into small pieces
Put onions and carrots into a brazier with already heated oil, sauté for a couple of minutes
- Add tomatoes and bell peppers, stir and simmer for another minute.
- After the vegetables are seasoned with tomato paste, add potatoes and beans to them, as well as salt and spices to taste: cumin, seasoning for pilaf, dried garlic, etc.
- Pour in water (about 3-4 glasses), stir and simmer under the lid until tender.
- Boil the noodles, put in a deep plate, fill it with gravy, sprinkle with fresh herbs on top.
You can use special lagman noodles, but it will be just as tasty with regular spaghetti or noodles.
Lean vegetable soup
A daily food calendar will help you create the right menu for 40 days in Lent 2022. For laymen, you can exclude days of dry eating and cook hot, lean food. For example, cook a delicious and light vegetable soup for lunch.
Ingredients:
- 400 g potatoes;
- 170 g cauliflower;
- 100 g carrots;
- 70 g onions;
- 120 g green peas;
- salt to taste;
- peppercorns to taste;
- bay leaf, greens;
- 3 tbsp. l. vegetable oil.
Preparation:
We clean the potato tubers, cut them into cubes and put them in a saucepan with already boiled and salted water
Cut the carrots into small cubes, send them to the potatoes, cook until half cooked. In the process of boiling, remove the foam from the surface of the broth so that it turns out to be transparent and tasty
We disassemble the cauliflower into small inflorescences and put in the broth, followed by finely chopped onions. Pour in oil and cook for 5 minutes
- After adding green peas, as well as black peppercorns along with bay leaves, cook for a few more minutes.
- At the end, add chopped dill, mix and remove the finished dish from heat.
Vegetables can be used both fresh and frozen. In addition, during Lent you can cook your favorite first courses, but only without meat - in water or vegetable broth.
Potato casserole with mushrooms
Casserole is a tasty and satisfying dish that is mainly prepared with minced meat. But today there are also lean recipes with a photo of a potato casserole with mushrooms, which turns out to be just as fragrant and very tasty.
Ingredients:
- 1, 2 kg of potatoes;
- 400 g of champignons;
- 150 g onions;
- 6 tbsp. l. vegetable oil;
- dried garlic and suneli hops to taste;
- red paprika to taste;
- a mixture of peppers and salt to taste.
Preparation:
- Shred the prepared champignons with plates, pour into a dry preheated frying pan and keep on fire until all the liquid has evaporated.
- Then add a couple of tablespoons of oil to the mushrooms, add the onion cut into rings and continue to fry until light brown. At the end, salt the mushrooms with onions and pepper a little.
- Peel the potatoes, cook in salted water until tender and puree.
- Pour a couple of tablespoons of oil into the crushed potatoes, add hops-suneli (just a little, so as not to interrupt the taste of the potatoes, but simply to give it a spice aroma).
- Grease the form with the remaining oil, sprinkle a little with breadcrumbs, spread half of the mashed potatoes, distribute over the entire surface.
- Now a layer of mushroom filling, sprinkle with dried garlic and cover with the remaining puree.
Grease the casserole with oil, sprinkle with paprika and send to the oven for 20 minutes (temperature 200 ° C)
By the same principle, you can make potato cutlets with mushroom or any other filling from the ingredients that are allowed during the fast.
Lentil meals
Lentils are a healthy product and, unlike peas, are more tender. These beans are increasingly used in lean, vegetarian and everyday meals. We suggest trying the recipe for a delicious Turkish soup, as well as preparing a hearty dinner with lentils and vegetables.
For Turkish soup:
- 80 g red lentils;
- 80 g bulgur;
- 4 tbsp. l. tomatoes in their own juice;
- 1 onion;
- 2-3 cloves of garlic;
- 2-3 sprigs of fresh mint;
- 1 tsp turmeric;
- 1.5 liters of water;
- salt and pepper to taste;
- lemon for serving.
For lentils with vegetables:
- 1 cup lentils
- ½ cup green peas;
- cauliflower;
- spinach;
- 1 carrot;
- half an onion;
- salt and garlic to taste;
- 1 tsp ground cumin;
- 200 ml of water;
- 600 ml of oat milk.
Preparation:
- Pour oil into a saucepan, put chopped onion and garlic, bring to softness.
- We fall asleep lentils with bulgur, then we send tomatoes in their own juice or 2 tbsp. l. tomato paste, fill everything with water.
- We immediately add turmeric, salt and cook for 20 minutes until the cereals are fully cooked.
- At the end, put mint (if there is no fresh one, you can take a dried spoon) and 2 slices of lemon. Add pepper to taste before serving.
- For the next dish with lentils, cut the carrots into thin slices.
- Cut the cauliflower into inflorescences. If it is frozen, pre-scald it with boiling water.
- We send carrots with cauliflower, onions, spinach and green peas to a frying pan preheated with oil.
- Now salt the vegetables, add spices and add lentils, pour everything with oat milk or plain water, cook under the lid for 20-25 minutes. Finally, add fresh or dried garlic for flavor.
Bulgur can be replaced with rice, but turmeric and mint must be present in the preparation of Turkish soup.
The food calendar for Lent 2022 for 40 days contains rules for monks. They are more strict, and indulgences are possible for the laity. For example, you can skip dry eating days.
