British scientists from the University of Leeds conducted an extensive study that resulted in the formula for the perfect toasted bacon sandwich.

The most important factors determining the quality of this culinary product, according to the data obtained, are the severity of the crunch and the strength characteristics of the bread. The study involved 50 testers who evaluated the quality of the proposed sandwiches for touch, smell and taste.

The parameters of an ideal sandwich: white, home-baked bread, 1 to 2 centimeters thick, bacon from the neck or shoulder (thin), cooked in a preheated oven with a grill, no more and no less than 7 minutes at a temperature of 240 degrees. Notes - turn over once during cooking, seasoning to taste.

According to the data obtained, the loudness of the crunch during the act of biting the sandwich should be 0.5 decibels. The optimal load causing the destruction of the bread layer is the application of a force of 0.4 Newtons by the chewing surfaces of the consumer's teeth. In the course of more than 1000 hours of research, about 700 variants of sandwiches were tested, differing in the methods of cutting and the degree of smokiness of the bacon, the oil used (sunflower, olive, vegetable), as well as the duration and intensity of toasting the final product. There is even a special mathematical formula for the strength of a bacon sandwich.

Research data refutes the previously widespread concept of bacon taste and smell as the leading parameters that determine the integral assessment of the quality of a sandwich by the end consumer.
